Home Made Marinara (Red Tomato) Sauce for Pasta & Pizza
Tomatoes - 10 to 15 nos ( serves 4)
Oregano dried / fresh ( 1 tblsp)
Parsley flakes - dried / fresh ( 1 tblsp)
Mixed herbs (optional) gives a nice flavor
Minced garlic - (8/10) pods
Onion - 3 (medium chopped) optional but gives a nice chunky taste
Red chilly powder - 1/2 tsp
Olive Oil - 1/2 cup (3 tbsp)
Cilantro / Coriander leaves
Salt to taste (1 tbsp)
Procedure:
Slice the tomatoes finely and blend them along with finely chopped cliantro. Add olive oil to a pan and put it on low flame. Toss in the minced garlic and onions and saute it for a 30 seconds. Dont let it turn golden brown as it would give a burnt taste. Now add the blended tomatoes and bring it to a boil. Stir constantly until it comes to a semi paste form. Add Salt, red chilly powder, Oregano & Parsley and cook for another 5 minutes. Turn off the stove and let it cool.
Homemade Alfredo (White) Pasta Sauce:
Milk - 1/4 litre or 1 cup
Maid or All purpose flour
Butter - 200 gms or 1 cup
Garlic - 8 to 10 pods
Onion - 2 to 3 nos
Mushroom (medium chopped) - 8 to 10 nos (optional)
Salt to taste (1 tsp)
Jalapeneos - 6 - 8 nos
Grated Cheese - 200 gm (Parmesan)
Oregano dried / fresh ( 1 tblsp)
Parsley flakes - dried / fresh ( 1 tblsp)
Procedure:
Mix maida in milk and keep it aside. Take butter in a pan and let it milk. Add chopped garlic, onion, mushroom, Jalapenos and fry for a couple of minutes. Now add the milk and maida mix to the pan and keep stirring. Add a little bit of water if you think the mix is too thick. Sprinkle salt, oregano and parsley and mix it well. Let it stir for 4-5 minutes until it starts thickening. Ensure that it doesn't become too thick.
Just before serving add Pasta (Penne, Ravioli) to the sauce and season with oregano and parsley.
Kids love it with garlic bread or toasted bread
